Whole Wheat Banana Bread

WHOLE WHEAT BANANA BREAD

1/2 cup (1/4 lb.) butter, melted
1 cup sugar (or 1/2 c. granulated and 1/2 c. brown sugar)
2 eggs, lightly beaten
1 c. mashed ripe bananas (about 3)
1 c. all purpose flour
1 c. whole wheat flour
1/2 tsp salt
1 tsp. baking soda
1/3 c. hot water
1/2 c. chopped walnuts
Optional: add chocolate chips and cinnamon

In a large bowl, stir together butter and sugar. Mix in eggs and banana, blending until smooth.

In another bowl, stir together all-purpose flour whole wheat flour, salt, and baking soda until thoroughly blended. Add to banana mixture alternately with hot water. Stir in nuts. Spoon batter into a greased 9 by 5-inch loaf pan (you could use another size pan...just watch for "done-ness", as baking times would vary).

Bake in a 325 F degree oven for 1 hour and 10 minutes, or until bread begins to pull away from sides of pan. Let cool in pan for 10 minutes; then turn out onto a rack and let cool completely. Makes 1 (yummy) loaf.

We just took this banana bread of the oven & it's almost gone already. (And Kris, the biggest banana bread fan, isn't even here!) It is so very delicious! We left out the nuts but put in choc chips. Yum!!

Just finished making it! All that was available was an angel food cake type pan so it looks pretty fancy shmancy. Not uber uber cooked inside given the temperature conversion but that's the way I like it. And my host family likes it too...thanks for the recipe Mommy!
