Dutch Baby

One of our family's favorites...but you have to be at the table when it comes out of the oven! Top with maple syrup, fresh fruit, and/or powdered sugar - didn't one of the little girls call it "sowah pugah"?!

For a 9 X 13 casserole (3-4 qt. pan):
1/3 cup butter
5 eggs
1 1/4 c. each milk and flour

For a 2-3 qt. pan:
1/4 cup butter
3 eggs
3/4 c. each milk and flour

Preheat oven to 425 F. Place butter in pan and set pan in oven until butter is melted and foamy (careful that it doesn't burn). Meanwhile, quickly mix batter. In a blender or food processor, whirl eggs at high speed for 1 minute; with motor running, gradually pour in milk, then slowly add flour. Continue whirling (the batter) for 30 more seconds. Low-tech method: in a bowl, beat eggs until blended; gradually beat in milk, then flour.

Remove pan from oven (butter should be foamy), then pour in batter. Return pan to oven and bake for 20 to 25 minutes (depending on pan size) or until puffy and well browned. Serve immediately!

I actually already had this recipe programmed into my phone for quick access, if you can believe that. Yes, it is THAT much of a favorite to my butter-and-sugar-loving husband & kids. We like it with "sowah pugah" and kumquat squeezed on top.
